What’s for dinner?
Cilantro Lime Chicken and Rice
Served with tortilla chips, shredded cheese, salsa and sour cream!
It looks delicious doesn’t it? It was!
When I cook it is rare that I do it with exact measurements. Unless I am baking or something. I often think up recipes last-minute.
I love to cook. It is one of my passions. And it joys me to see the look on friends and families faces when they taste my food. If you try this out you gotta let me know what you think.
*This dish can be made for just about any amount of people. Just adjust the ingredients accordingly.
- Chicken tenders cut into chunks
- Fresh Cilantro
- Lime juice
- White Rice
- Sea Salt
After I cut up the chicken(not pictured) I add salt and pepper, I then add lime juice, cut up cilantro, and a spoonful of garlic. I let this marinate for a few hours in the fridge covered.
I put white rice, a nice long squeeze of lime juice and some fresh-cut up cilantro in my rice cooker with the correct amount of water per rice ratio and set it to cook.
Cooking the chicken:
I heat up my cast iron skillet to medium heat
Then I pour the bowl of chicken and marinade into the preheated skillet and cook it up while stirring. You want the liquid to evaporate. Continue stirring and flipping chicken every couple of minutes until the outside of the chicken is no longer pink.
Once the chicken is no longer pink on the outside I turn up the heat to medium high about 7 or so and finish cooking the chicken until slightly browned and the chicken is cooked throughout.
It is time for dinner Bon Appetite!
I like to crush up my tortilla chips and mix everything together!
